FOOD IS MEDICINE
Culinesse believes that there is a direct link between what we eat, how we feel and how well we wiII age. “Our health is impacted by the health of soil, plants and animals — they’re indivisible” (Sir Albert Howard). We co-exist with plants and those who plant, harvest and prepare our food. We locally source produce, seek sustainable seafood and free-range meats, offer plant-based foods and vegetarian options. We work to replace the “dirty dozen” with organic offerings whenever available. We feature foods that are “nutritionally dense, but low in calories”. The best transportation route for food is from local farms to tables.
NOURISHING THE EARTH
At Culinesse, we live by the proverb: “Treat the earth well. It wasn’t given to you by your parents; it was loaned to you by your children.” We work with suppliers and clients to minimize energy use, leave the smallest carbon footprint possible, encourage sustainable agriculture, and support regenerative agriculture. “An intimate connection exists between the food native to a region and the people living there. The heart, soul and character of the land lie within its food.” (Marc David) Healthy living starts with healthy eating. Healthy foods can only come from a healthy earth. It is sacred; we treat her accordingly.
